so far so good….i’m waiting for it to set up but i have a question. towards the end…there was alot of butter floating around in the pot. like a broken sauce. I poured off the excess and the tofee still seems to have comeout ok. did I use too much butter. 1# and 1#(2cups) of sugar.
should I have stirred it continuously? I stopped for a minute or 2 when the phone rang.
The butter and suger measurements are the same. Equal parts butter to equal parts sugar. The butter should be allowed to melt but not come to a boil. If the sugar is not added before the butter comes to a boil, then you would likely experience butter separation. Stirring continuously until ready to pour. Only stopping to change direction with your metal stirring spoon or checking the temperature. I hope this helps for your next batch. It does take a couple of attempts to get it just right!

I havent incorporated my toffee into any other recipes; but that is a good idea. The apple crumble recipe sounds like it might work. Maybe experiment with crushing the toffee prior to incorporating it into your apple crumble. Let me know if it works
