Baker’s Special is a C&H Sugar product. It is a very fine granulated sugar. Not quite as fine as powered sugar, but still very fine. By the way, powdered sugar cannot be used because of the no-caking additives.

England and NZ are very alike when it comes to ingredients etc. I think they are talking about caster sugar.
What do you mean by adding a grain to the toffee? I thought it was supposed to be smooth.
