<p><strong>Ingredients: </strong><br />
1 1/4 lb White chocolate; cut-up<br />
14 oz Sweetened condensed milk<br />
1 1/2 ts Rum extract<br />
1 1/2 ts White vinegar or lemon juice<br />
ds Salt<br />
1 1/2 c Walnuts; chopped<br />
6 oz Semisweet chocolate chips melted<br />
<strong><br />
Directions:</strong><br />
In a 2-qt glass bowl, melt white chocolate with sweetened condensed milk in microwave on Medium 3 to 4 mins, or until melted and smooth when stirred. Stir in rum extract, vinegar, and salt; mix well. Stir in walnuts. 2. Spread half of white chocolate mixture into a buttered 8- or 9-inch square baking pan. Refrigerate about 10 mins, or until almost set. Spread melted semisweet chocolate over white chocolate. Carefully top with remaining white chocolate mixture, spreading evenly over all. Refrigerate until firm, about 2 hours or longer. Cut into 25 squares. Store in refrigerator in tightly covered container.</p>

Ingredients:</strong></p>
<p>1 cup white sugar<br />
1 cup brown sugar<br />
1 cup heavy cream<br />
1 teaspoon maple flavored extract<br />
1 teaspoon butter</p>
<p><strong>Directions:</strong></p>
<p>In a large glass bowl, stir together the white sugar, brown sugar, cream and maple extract. Place in the microwave, and cook for 11 minutes on full power, or until a candy thermometer registers 234 &#8211; 240 degrees F (112 &#8211; 115 degrees C). Do not microwave the thermometer.<br />
While the fudge is cooking, fill the sink with 2 to 3 inches of cold water, and add a few ice cubes if you like. When the fudge has cooked, place the bowl into the cold water, being careful not to get any water into the mix. Stir in the butter, and continue stirring until the mixture is thick enough to wrap around the spoon. Pour into a buttered 8 inch square dish, and let stand at room temperature for 30 minutes. Cut into small squares, and store in the refrigerator.</p>

<p>2 c  Sugar<br />
2    Squares (2 oz) unsweetened chocolate<br />
1 c  Light cream<br />
1 T  Butter</p>
<p><strong>Directions:</strong></p>
<p>Combine sugar, coarsely chopped chocolate, and cream.  Cook<br />
over moderate heat, stirring only until sugar and chocolate have<br />
melted.  Continue cooking until mixture reaches 238 degrees or until<br />
a few drops tested in cold water form a soft ball. Remove from heat,<br />
add butter, and cool slightly.<br />
Beat until fudge begins to harden,<br />
then transfer to a buttered platter. Cut intosquares before the fudge<br />
is absolutely firm. Makes a little more than 1 pound. VARIATIONS: To<br />
make Wellesley Fudge, add 1/2 lb of marshmallows when the candy is<br />
removed from the heat.</p>

<p>Very easy chocolate fudge recipes. They taste delicious with chocolate and vanilla and are quick to make, can it be better? The recipe gives about 36 squares.<br />

<p><strong>Ingredients:</strong></p>
<p>1 lb Powdered sugar<br />
1/2 c  Cocoa<br />
1/4 t  Salt<br />
1/4 c  Milk<br />
1 T  Vanilla extract<br />
1/2 c  Butter<br />
1 c  Nuts,chopped<br />

Directions:</strong></p>
<p>In a 1 1/2 qt. casserole, stir sugar, cocoa, salt, milk and vanilla together until partially blended (it will be too stiff to blend thoroughly).  Put butter over top in center of dish.  Microwave at high for 2 minutes, or until smooth.  If all butter has not melted in cooking, it will as mixture is stirred.  Blend in nuts.  Pour into a lightly buttered 8x4x3&#8243; dish.  Chill 1 hour in refrigerator or 20 to<br />
30 minutes in freezer. Cut into squares.</p>

This is a nice marshmallow creme fudge recipe with canned pumpkin and almonds. Very smooth and creamy, one of my and my familys favorite fudge. The recipe gives you: 3 dozen squares.<br />

<p><strong>Ingredients:</strong></p>
<p>1 cup almonds<br />
3 cups white sugar<br />
1 cup butter<br />
1 (5 ounce) can evaporated milk<br />
1/2 cup canned pumpkin<br />
1 teaspoon pumpkin pie spice<br />
2 cups butterscotch chips<br />
1 (7 ounce) jar marshmallow creme<br />
1 teaspoon vanilla extract</p>
<p><strong>Directions:</strong></p>
<p>Butter a 9&#215;13 inch pan and set aside.<br />
Preheat oven to 300 degrees F (150 degrees C). Arrange almonds on a cookie sheet and place in oven to toast. Stir frequently. Do not burn. Remove from oven and set aside.<br />
In a heavy saucepan, combine sugar, butter, milk, pumpkin, and spice; bring to a boil, stirring constantly. Continue boiling over medium heat until mixture reaches 234 degrees F (118 degrees C) on a candy thermometer, about 10 minutes.<br />
Remove from heat. Stir in butterscotch chips. When chips are melted, add marshmallow cream, nuts, and vanilla. Mix until well blended.<br />
Immediately pour butterscotch mixture into prepared pan. Spread evenly. Cool at room temperture. Cut into squares, and store in the refrigerator in an air-tight container.</p>

<p>Very delicious microwave fudge recipe. This creamy fudge with  liqueur and walnuts melt-in-your mouth. You will never want to make another sort of fudge if you taste this one. Makes 36 pieces.<br />

<p><strong>Ingredients: </strong></p>
<p>1 sm Potato (about 5 ounces)<br />
3 T  Irish Creme liqueur<br />
2 Squares (2 oz) unsweetened chocolate<br />
3 T  Margarine/butter<br />
1 lb Powdered sugar,unsifted (about 3-1/4 cups)<br />
36    Walnut pieces</p>
<p><strong>Directions:</strong></p>
<p>Line an 8x8x2-inch pan with foil. extending foil over the edges of<br />
the pan. Butter foil; set the pan aside.  Prick potato 2 or 3 times<br />
witha fork. Cook on 100% power (High) for 4-5 minute sor until<br />
tender, turning over once. Cool and peel.  Mash potato (you should<br />
have 1/3 cup).  Add liqueur, stir until smooth.  Set aside.</p>
<p>In a 2-quart microwave-save casserole combine chocolate and margarine;<br />
cook, uncovered, on High for 1-2 minutes or until almost melted,<br />
stirring once.  Stir until smooth.</p>
<p>Stir potato mixture into chocolate mixture.  Slowly stir in powdered<br />
sugar. Stir or knead until smooth.  Press into the foil-lined pan.<br />
Score into thirty-six 1-1/4-inch squares.  Press a walnut piece into<br />
each square. Cover and chill until firm.  Holding foil at edges,<br />
remove the fudge from the pan; cut into squares.  Drizzle Designer<br />
icing over fudge.</p>
<p>=&gt;Designer Icing -In a small microwave-save bowl, cook 1 Tbsp<br />
margarine/butter on High for 45 seconds or until melted. Beat in 1/3<br />
cup sifted powdered sugar and enough Irish Creme liqueur (1-2 Tbsp)<br />
to ake an icing of piping or drizzling consistency.</p>

<p><strong>Ingredients:</strong></p>
<p>1 pk (3-oz.) cream cheese<br />
1 cn (14-oz.) sweetened condensed milk,divided<br />
1/2 t  Vanilla<br />
3 pk (6-oz. each) semisweet chocolate pieces<br />
1 T  Sweet butter (or margarine)<br />
1/2 c  Coarsely pistachio,chopped nuts</p>
<p><strong>Direction</strong></p>
<p>Place cream cheese in small glass bowl of electric mixer or in a<br />
1-quart microwave-safe bowl. Microwave on HIGH (100%) 15 to 25<br />
seconds or until cream cheese has softened. Add 2 tablespoons of the<br />
sweetened condensed milk and the vanilla. Beat on low speed just<br />
until mixture is smooth; set aside.</p>
<p>Place remaining sweetened condensed milk, semisweet chocolate and<br />
butter in a 2 1/2-quart microwave-safe bowl. Microwave on medium<br />
(50%) 2 to 3 1/2 minutes or until mixture can be stirred smooth and<br />
is glossy, stirring twice. Stir in pistachio nuts.</p>
<p>Spread chocolate mixture evenly into prepared pan. Drop cream cheese<br />
mixture, by spoonfuls, over chocolate; swirl lightly over chocolate.<br />
Let stand until firm or place in refrigerator.</p>
<p>Cut into 25 even<br />
squares by making 4 lengthwise and 4 crosswise cuts equidistant from<br />
each other, then cut each square diagonally in half. Store in<br />
airtight container with waxed paper between layers. Keeps best if<br />
refrigerated.</p>

<p>This is a delicious recipe for vanilla fudge. The recipe gives: 1 3/4 pounds.<br />

<p><strong>Ingredients: </strong></p>
<p>3 c  Sugar<br />
1/2 t  Salt<br />
1 c  Light cream<br />
1/2 c  Milk<br />
1/4 c  Light corn syrup<br />
2 T  Butter (or margarine)<br />
2 t  Vanilla<br />
1 c  Candied cherries,quartered</p>
<p><strong>Directions:</strong></p>
<p>Combine sugar, salt, cream, mil, corn syrup and butter in a large<br />
heavy saucepan.<br />
Cook over medium heat, stirring constantly, until mixture comes to<br />
boiling. Continue cooking, stirring occasionally, until candy<br />
thermometer reaches 238F. (soft-ball stage)</p>
<p>Remove from heat, leaving thermometer in the saucepan. Cool to<br />
100F.<br />
Add vanilla. Beat briskly until fudge thickens and begins to lose<br />
its gloss. Stir in cherries.</p>
<p>Pour into buttered 8&#8243; square pan. Cool. Cut into squares when<br />
firm.</p>

<p>My aunt&#8217;s recipe for chocolate fudge is the best I ever have tasted. Gives about 3 pounds.<br />

1 (7 ounce) jar marshmallow creme<br />
1 1/2 cups white sugar<br />
2/3 cup evaporated milk<br />
1/4 cup butter<br />
1/4 teaspoon salt<br />
2 cups milk chocolate chips<br />
1 cup semisweet chocolate chips<br />
1/2 cup chopped nuts<br />
1 teaspoon vanilla extract<br />

Directions:</strong><br />
Line an 8&#215;8 inch pan with aluminum foil. Set aside.<br />
In a large saucepan over medium heat, combine marshmallow cream, sugar, evaporated milk, butter and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly.<br />
Remove from heat and pour in semisweet chocolate chips and milk chocolate chips. Stir until chocolate is melted and mixture is smooth. Stir in nuts and vanilla. Pour into prepared pan. Chill in refrigerator for 2 hours, or until firm.</p>

<p><strong>Ingredients:</strong><br />
3 cups white sugar, divided<br />
1/4 cup boiling water<br />
1 cup liquid non-dairy creamer<br />
1/4 teaspoon salt<br />
2 teaspoons grated orange peel<br />
1 cup chopped almonds</p>
<p><strong>Directions:</strong><br />
Grease an 8 x 8 inch square pan.</p>
<p>In a heavy saucepan over medium heat melt 1 cup of sugar, stirring constantly. Carefully add boiling water. Stir in remaining 2 cups of sugar, non-dairy creamer and salt. Stirring constantly, bring mixture to a boil.</p>
<p>Without stirring, heat to 242 to 248 degrees F (116 to 120 degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball. Remove from heat and cool to room temperature.</p>
<p>Beat mixture until it loses gloss. Immediately fold in grated orange peel and nuts and transfer to prepared pan. Chill for 2 hours, or until firm, before cutting.</p>
