This is my first video in 2007, and I return to the kitchen in making my favorite new dessert, a low carb non-bake cheesecake. This cheesecake is better than any no-bake cheesecake mix that you would buy in the store. You have to try this one. Recipe: (courtesy of Linda’s Low Carb) www.genaw.com CREAMY NO-BAKE CHEESECAKE 1 packet unflavored gelatin 3/4 cup vanilla flavored sugar free syrup 24 ounces cream cheese, softened 1 cup heavy cream, whipped “Graham Cracker” Pie Crust * Prepare crust according to recipe for baked crust. In a small pot, sprinkle gelatin over 1/2 cup syrup and let soften 5 minutes. Heat and stir over low heat to dissolve gelatin completely. Beat cream cheese with remaining 1/4 cup syrup until creamy. Gradually beat in gelatin mixture. Chill until slightly thickened, about 1 hour, gently whisking occasionally to prevent lumps. Fold in whipped cream. Pour into crust and chill until set. Mine looked set after 2 hours, but I recommend chilling at least 6 hours. Makes 12 servings Freezing not recommended Per Serving: 368 Calories; 37g Fat; 7g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs “GRAHAM CRACKER” PIE CRUST 3 ounces almond flour, 3/4 cup 3 tablespoons flax meal 1/4 teaspoon salt 6 tablespoons butter, melted 1/3 cup granular Splenda or equivalent liquid Splenda Mix dry ingredients in a small bowl. I love to make serveral type of candies for the holidays and wrap them up nicely as gifts. I am lokking for some new ideas. Here and easy on I’ll share:

Take medium size pretzels and lay them out on a cookies sheet lines with wax paper. Place one rolo candy on top of each pretzel. Put them in the oven for just a few minutes so the rolo melts over the pretzel. As soon as you take them out of the oven top them with a pecan half. You’ve got easy turtles!

Praline candy recipe from 1944 please (war time substitutions!)?

Last I asked this question, there was some confusion.

I was always more into working on the car w/granpa than messing around in the kitchen. My grandmother died in 1990. I started missing the pralines 1992, and realized her recipe was not written anywhere.

My grandmother (b. 1901) learned to make the most delicious pralines I’ve ever had when she was in New Orleans during World War II in 1944.

During WWII gov’t. "rationing" happened. Things like cream, milk, sugar (gasoline, beef, rubber…) were heavily rationed in the U.S. There were rationing stamps for everyone. Recipes *had* to be changed. Cream does not behave like milk, for example.

So… does anyone have a fantastic recipe for praline candy that uses the ingredients available in 1944?
I know probably the only people who might know this are currently age 65 -115.

Despite my command of English, I grew up in extreme poverty w/these grandparents.

We never had cream nor half-and-half, we never had butter anytime when I was growing up. We did have regular brown sugar & white sugar. We also kept a box each of 10X & 4X powdered sugar around, but I never saw "light brown" sugar until I moved from home. Anything that lists cream, half-and-half, butter, or "light brown" sugar can’t be what she was making. It may be good, but I want something as close to what I grew up enjoying as possible, so it can’t have that stuff.

We had margarine (& corn oil). She used Carnation evaporated milk for cream (in coffee I know), but she may have used regular milk. I only remember the big deal about vanilla being last.

Please, a recipe you *know* that works, not just something you found on a website somewhere.

oh, and we always had molasses on hand… not that anyone has mentioned that, but who knows (not me!!!).

I’m sure about it having

brown sugar,
vanilla, and
pecans,

pretty sure about margarine (not corn oil, but not sure), but I got *no* clue which/if (milk, buttermilk, evap. milk), or any sugar used other than brown sugar, and *no* clue whatsoever about proportions, period.

So many recipes seem to ask for regular table sugar, but I don’t remember that. She loved 10X sugar so much I thought she might use that, but no praline recipe I’ve seen anywhere uses powdered sugar so I guess not? I don’t know.

In exchange for my kitchen ignorance, I can replace the pads on disc and drum brakes and set the points on the plugs in a tune-up! ..and lots of other stuff like that.
