Have you ever made candy before?
Most candy involves heating sugar up to a precise temperature, with a candy thermometer. The recipe might have terms like "soft ball stage" or "hard ball stage" referring to the desired consistency of the candy. Just a few degrees off, and your candy won’t set, or it will be grainy, or have some other problem with it. This includes taffy (not to mention the time spent pulling it!), fudge, and probably the butter mints. It takes a lot of trial and error to learn how to make candy right, and it’s not something you want to be messing with at the last minute.
There are easier alternatives. Chocolate is easier to work with. Only thing is you have to be careful not to burn it when you melt it. Ganache is VERY easy to make, and makes delicious truffles. You can just roll ganache balls in cocoa powder or maybe powdered sugar, or dip them in some melted chocolate. Another idea is caramel or chocolate covered apples.
